Authentic Swahili Beef Pilau Recipe

Ingredients:

3 cups basmati rice

1kg beef with bone (boiled in 1 liter water)

1 tablespoon ghee

3 tablespoons vegetable oil

2 onions, sliced

  2 tablespoons whole pilau mix (consisting of whole cinnamon, whole cardamom, whole cumin seeds, whole cloves, and whole black peppercorns)

1 tablespoon garlic-ginger mince

1/2 kg potatoes, halved

3 & 1/2 cups beef broth (from the boiled beef)

✓ Salt to taste




Procedure:

1. Sauté Onions: In a pot, heat ghee and vegetable oil. Add sliced onions and cook until they're nice and soft.

2. Add Spices and Potatoes: Add whole pilau mix and garlic-ginger mince. Mix well, then add halved potatoes. Cook for 2-3 minutes.

3. Add Beef and Rice: Add boiled beef, washed and soaked rice. Mix well.

4. Add Broth and Season: Add beef broth and salt to taste. Bring to a simmer until the water is almost evaporated.

5. Steam and Serve: Cover with a tight lid, reduce heat to low, and steam for about 15 minutes or until the rice is nice and fluffy. Serve with Kachumbari and pilipili masala. Enjoy your delicious Swahili beef pilau!
